Hi Doctors, I wanted to get your expert opinion on my chest.

I'm 8-days post-op and I don't have a totally flat chest. I'm a bit disheartened because I see people on this forum who are 7 or so days post-op with a completely flat chest. I would like to get your opinion/s on whether the surgeon did not remove enough fat or if this is just swelling which will go down in time.

FYI, the glands were removed in their entirety and I had around 300ml of fat removed from each side.

From the photos, you may be fine.  There is a lot of swelling and bruising in the post-op photos, and it is way to early to comment further. You had a significant case to start, and the description of your procedure with gland and 300 cc of fat suggests that you should get a reasonable result.  Give it time.
