My biggest concern is that I'm having PAIN two weeks post op all of a sudden today. I will feel nothing and then all of a sudden get a super sharp pain - and then it won't go away. It's not the random sharp pains that are normal - it will stay for quite awhile. I hate this part...

Not everyone's recovery is going to be the same an checking it every hour won't help, I did this for the first few weeks til I got so sick of checking this site an worrying g that I started to check only when I get in the shower. It's gonna take time and a bit of it. There is gonna be pain, I'd see my doctor if it was extreme or largely swollen.
