Since I won't be able to go to the gym for some time to recover, I will have to adjust my diet to still be in a caloric deficit (I'm cutting.) But will this hinder my recovery from surgery?

IMO- Running a calorie deficit while recovering from surgery is a bad idea. As im sure you know, a calorie deficit puts your body in a catabolic state. After any surgery/trama/injury it's ideal to have your body in an anabolic state. Additionally, you may be depriving your body of key nutrients needed in mending tissue.

That being said, the body is remarkable, and chances are that you would heal even if you stopped eating all together.

That's true. Wondering if I should stop Intermittent Fasting as well during recovery and just eat at maintenance. I shall see.
